How it's made
Slow proofed overnight, rolled by hand at six in the morning, then kettle boiled and baked. That is the whole method. Nothing fancy, and nothing we would want to change.
Bagel care
Freeze now. Enjoy later. Unless you're eating them right away, put your bagels in the freezer as soon as they arrive. Keep the bag sealed tight to prevent freezer burn. Skip the fridge, it dries bagels out.
Bring 'em back. Three ways, depending on how much time you have.
Oven, best overall. Thaw for 30 minutes, then bake at 450°F for 5 to 8 minutes, until warm with a lightly crisp exterior.
Microwave + toaster, fastest. Microwave from frozen for 20 to 30 seconds, just until soft enough to slice. Slice and toast.
Air fryer, nice and crispy. Air fry from frozen at 350°F for 6 to 7 minutes.
For best quality, enjoy within 3 months.
Delivery
Bake days are Tuesday, Wednesday, Thursday and Friday. Order by 9am ET on a bake day and your box is baked that morning and leaves the same evening.
Free shipping on every box, arriving within two days of the bake. Pay for FedEx overnight if you want it the next day. You will see the exact delivery date for whichever option you pick before you pay.
Friday bakes are Saturday deliveries. A Friday box has one day to travel, so Saturday delivery is the paid option on it. The free option on a Friday order bakes the following Tuesday instead, because the only other way to send it for nothing is to let it sit in a depot all weekend.
After 9am Friday, the next bake is Tuesday. On the free option to the furthest states, an order late in the week bakes the following Tuesday for the same reason: that is the difference between bagels that arrive fresh and bagels that spend the weekend in transit.
We ship to the lower 48 and DC. Not Alaska, Hawaii, US territories, military addresses or PO boxes.
Orders are final from 9am on the bake day, which is when your box goes on the bakery's list.

Questions
Can I mix and match flavors?
Yes. Flavors come in packs of six, and every pack can be a different flavor. A 2 dozen box holds four packs, a 4 dozen box holds eight.
How many bagels are in a pack?
Six, all the same flavor. Pick the same flavor twice for a full dozen of it.
How long do they stay fresh?
Three days at room temperature. For anything longer, freeze them in the sealed bag the day they arrive and they keep for three months. Skip the fridge, it dries bagels out. Full instructions are under Bagel care next to the add-to-cart button.
Are they shipped frozen?
No. They go out the day they are baked and arrive within two days, so they reach you the way they leave the kitchen rather than thawed.
Where do you ship?
Anywhere in the United States. Shipping is calculated at checkout and depends on how far you are from New York.
Can I change or pause a subscription?
Any time. Choose every two weeks, every month or every three months, and pause, skip or cancel whenever you like.
